Vanilla poached peaches

Serves: 2

Prep Time: 15 minutes (+8 hrs ideally to sit overnight)


  • 2 peaches, cut in half and deseeded
  • 1/4 vanilla bean, split
  • 1/4 cup coconut sugar
  • 1/4 cup filtered water


  • 1 tbs yoghurt per person (use a high quality low fat variety) Alternatively, you could use COYO or cashew yoghurt if you would like some dairy-free creaminess.

Feeling peachy? Cooking fruit can sometimes make it taste less fruity, however in this case of these vanilla poached peaches the poaching only enriches the peachiness of the peaches. And if you’ve got some lackluster peaches. Poach them! I could definitely eat this for breakfast as well as dessert so you make extra for the next morning too. Poaching allows this glorious syrup to seep into the peaches so they are bursting vanilla flavour. It’s a seriously scrummy and very simple treat.


  1. Place the sugar, water and scrapped out vanilla bean in a saucepan on a medium heat.
  2. Stir the mixture until all you see small bubbles and the sugar has dissolved.
  3. Halve and de-core the peaches then place them into the liquid, pop the lid on then simmer for about 4 minutes on each side of the peach, or until the entire fruit is soft (this could be 10 minutes on each side though if your peaches are hard).
  4. If you would like to poach the peaches whole, or if you would like more syrup just remember that the syrup is a 1:1 ratio of sugar to water.
  5. Place the peaches into a dish, pour the vanilla syrup over them and then refrigerate overnight or for 8 hours.
  6. You may wish to add a dollop of yogurt on top just before serving.
