Banana ice-cream with honey and raisins

Serves: 2

Prep Time: 5 minutes (+30 minutes if bananas are not already frozen)

  • 4 very ripe frozen bananas, chopped
  • 1 cup raisins
  • Honey to drizzle over

Holy bananas. Why have I not made Banana ice-cream with honey and raisins sooner? I feel like a kind of fruity Christopher Columbus.

I really did not expect this recipe to be quite so delicious (mainly because it’s so obvious. I mean frozen bananas blended, come on). I knew it would be good, but this is incredible. In fact I barely made it to the end of this shoot, I was so desperate to gobble it down. So if you like ice cream, or bananas, then please give it a go. You really will be wondering why you haven’t done it sooner.

  1. Place the frozen bananas into a food processor or blender and blend until smooth. (Make sure you chop the bananas up before you freeze them, it makes them much easier to blend). Don’t forget to lick the spoon…and the bowl…and the blender
  2. Scoop the ice cream into bowls to serve immediately or alternatively, pop it in the freezer for a rainy day.
  3. Once finished you can pop the ice cream into a tub in the freezer to save it for a rainy day, or serve immediately. Top with raisins, and drizzle over honey before serving.
