Banana, chia and coconut energy balls

Serves: Makes about 10 balls

Prep Time: 20 mins

1 cup of almonds

1 cup medjool dates (roughly 8 dates), pitted

1 ripe banana

1/4 cup ground flaxseed

1 ½ tbs chia seeds

¼ cup dissected coconut

You won’t BALLieve how super easy to make these energy nuggets of pure health gold are. And they taste great too.

They are basically a really easy version of store bought energy balls (or bars) that seem to be everywhere at the moment.

As they’re homemade you know there’s no funnies whatsoever, you can modify to taste and they’re a fraction of the price. They also keep well in the fridge so it’s worth making a big batch.

Put the almonds in a food processor and blend them for roughly a minute until they start to form a flour like mix.

Gradually add in the pitted dates, banana, flaxseed chia seeds and dissected coconut until a smooth and sticky mixture forms, then the balls are ready to be rolled.

Use your hands to roll the mixture into roughly 4cm wide balls. If you want to add chia seeds or dissected coconut to the outside then roll the balls in either before placing them into the fridge for a couple of hours to set. Store them either in the fridge or freezer.
