Balsamic strawberries

Serves: 2

Prep Time: 1 hour 5 mins

  • 2 cups strawberries, halved and stalks removed
  • 1/4 cup coconut sugar
  • 2 tbs balsamic vinegar

  • 1 tbs low fat yoghurt per person (you could also add cashew yoghurt or COYO for a dairy free option) or leave this out if you would like the dish raw.

This balsamic strawberries dessert is so decadent while being totally guilt free. Something magical happens when you put balsamic vinegar on strawberries, a sharp but delicate treat emerges. The balsamic makes the sweetness of the strawberries sweeter without them tasting too sugary, truly enhancing the flavour. And it’s a cinch to put together!

  1. An hour before serving place the balsamic and sugar into a bowl and combine. Gently stir in the strawberries.
  2. Cover the mixture and place in the fridge for at least an hour.
  3. Once marinated, drain the strawberries and place them into separate bowls to serve, reserving some of the balsamic mixture to drizzle over them.
  4. You can also place a dollop of yoghurt on top if desired.
