Acai blueberry and banana bowl

Serves: 1

Prep Time: 5 mins (+ 30 mins if banana and blueberries are not already frozen)

  • 2 tbs acai powder
  • 1 cup blueberries, frozen (use fruit you have frozen yourself in the freezer if possible, ready frozen fruit tends to have a very high water content)
  • 1 cup blueberries, fresh
  • 1 frozen banana
  • 1 banana, chopped

The most delicious acai blueberry and banana bowl. It only has four ingredients and takes minutes to put together. With the mirage of health benefits acai provides it’s defiantly worth giving this recipe a go.

I apologise for the use of a bizarre super food in one of my recipes. I’m not usually a fan of strange ingredients but acai is worth taking a look at. It packs a serious nutritional punch, can be ordered online here and then conveniently delivered to your office or home, and comes in a powder (or frozen) so can be easily stored for a long time. The only downside is that it is a tad on the pricy side.

So what is acai? Where has it come from and why is it suddenly to trendy? Native to the Amazon Rainforest the acai tree produces small, dark purple berries. As a result of its extraordinarily high nutritional value, indigenous tribes have used acai for thousands of years to boost energy, treat aliments and support a quick recovery. It has also been nicknamed the “Beauty Berry” due to the combination of antioxidants, amino acids and omega fatty acids it possesses, which all help slow the aging process. It is also exceptionally rich in vitamins A, B, C and E, amongst many other vastly beneficial minerals and nutrients including Selenium, Zinc and Essential Fatty Acids. All of which work together to not only make you feel good but look good too. Although acai is not a substitute for a well balanced diet it is certainly a food worth trying to incorporate into your diet. So I do hope you have a go at making this very yummy bowl. The different flavours and textures work so well together its irresistible, which is why I just had to include it.

  1. Place the acai, frozen blueberries and frozen banana in a blender, and process until smooth. (When freezing the banana its always best to remove the skins and chop them up into little medium sized pieces. This makes it a lot easier on your blender.)
  2. Transfer the blended mixture into a bowl, top with sliced banana and homemade granola or muesli if you want to add some bulk to it. Eat immediately!
