Quick porridge with berries and pistachios

Serves: 1

Prep Time: 5 minutes

Ingredients

  • 3/4 cup oats (make sure these are 100% gluten free rolled oats, instead of quick oats and that they don’t have anything added to them)
  • 3/4 cup milk (You can use any kind of milk of your choice, I use almond milk to keep it dairy free)
  • 1/2 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg

Toppings

  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • Pistachios (don’t add if you would like the recipe to be nut free)

Our grandmothers tried to tell us, and the Scottish have been banging on about them for years, but it has taken a health food revolution to convince us that the humble oat is a very worthy meal. Low in fat and high in fibre they help ensure a slow and sustained release of energy. So tell your grumbling stomach to zip it and make this super delicious quick porridge with berries and pistachios

This is a breakfast favourite of mine because it’s quick, cheap, good for you and oat of this world.

Method

  1. Pop the oats, cinnamon, nutmeg and milk into a pan on a medium heat. Stir continuously for about 3 minutes until the porridge has thickened to your desired consistency. If you would prefer to have it cold then pop the oats, cinnamon, nutmeg and milk into a bowl in the fridge for at least 10 minutes.
  2. Place into a bowl to serve and then top with delicious berries! I chose to add raspberries, blueberries and a small serving of pistachios on top, but you can add any type of fruit or nut you like. Easy-peasy.
