Chargrilled courgette, Pecorino and honey salad

Ingredients

  • 2 large courgettes
  • Pecorino cheese, to taste
  • Runny honey, to taste
  • 2 handfuls rocket
  • Olive oil, drizzle
  • 1/2 Lemon

I love finding salad combinations that involve as few ingredients as possible, but have tons of flavour, and this is one. The  rich saltiness of the cheese plays perfectly with the chargrilled flavour of the courgettes, and both are beautifully tied together by the delicious botanical sweetness of the honey. Simple simple simple.

Method

  1. Place a griddle pan on a high heat. While it heats up, slice the courgettes at an angle into medium chunks. Then pop them in a bowl, with a drizzle of olive oil and a pinch of salt, use your hands to make sure they are evenly coated. Lay them in the hot pan and don’t move them until they have black char lines, this time can vary so keep a look out but it is usually around 5-8 minutes. Turn them over and cook for another couple of minutes to chargrill the other side. When they are cooked place to one side and allow to cool.
  2. Using a peeler, shave the Pecorino and set aside.
  3. Place the rocket and courgettes into a bowl and drizzle with lemon juice, using your hands to make sure they are evenly coated.
  4. Using a peeler, shave your desired amount of Pecorino on top of the rocket and courgettes, then drizzle the whole lot with honey before serving.
